In 2007, Traeger Wood Pellet Grills replaced their 180 degree controller with the 225 degree digital controllers - a great improvement over the 3-speed controller. At the same time, they removed the option for 180 degree smoking. What that means is that the lowest temperature setting is 225 degrees rather than 180 degrees. Here at Pellet Grill Outlet, we cook on Traegers 24/7 and some of our recipes call for 180 degrees!
We like to cook at 180 degrees because water evaporates at 212 degrees. At 180 degrees, the moisture gets hot, but does not boil. So we can cook our food longer and keep it more tender. The result is delicious!
