Hawaiian Island Steaks
| When it's time for a "get away" why not choose Hawaii? Don't have the time or the money to make the trip for real? Make it an afternoon in the Islands from your own backyard. A couple of Mai Tai's, a Blue Hawaii or maybe a Pina Colada could make it feel like you've arrived at Black Sand Beach on the Big Island. The recommended pellets for this recipe are a blend of the maple and oak.
Ingredients:
(For 4 servings)
4 New York strip steaks, 8 oz each, 1 inch thick
Marinade:
½ C Soy sauce
2 t Ginger, minced
2 Cloves garlic, minced
1 Shallot, chopped
¼ t Red pepper flakes
½ t Curry powder
2 T Orange marmalade
4 Pineapple slices, fresh or canned
Directions:
Trim excess fat from the steaks. Place in a shallow glass dish or heavy zip-lock plastic bag.
Combine marinade ingredients and mix well. Pour over the steaks. Seal bag or cover glass dish. Allow to marinade for 4 hours, turning once or twice.
Start up the pellet grill and set temperature to 350 F degrees.
Remove steaks from marinade and place on grill, reserving marinade. Grill steaks for 7 - 10 minutes on each side brushing occasionally with marinade.
Add pineapple slices to steaks when almost done. Brush with marinade. Cook until heated through.
